This was a fun one back on the old boards, I figured I'd resurrect it here.
I've shared a few other recipes in the IRC now and again, but I'll start with what I'm doing for dinner tonight. Cheddar garlic breaded chicken.
two chicken breasts
egg wash (I used two tablespoons of milk, and two eggs)
three cloves garlic
cup and a half of breadcrumbs
cup of parmesan cheese
Preheat the oven to 375 and whip up the egg wash, throw in the three cloves of garlic (minced works well). Soak the chicken breasts in the wash with the garlic, then lay them into the breadcrumbs and parm cheese mix. Set them in a pyrex baking dish to bake for half an hour. Around the last 5 minutes or so, either put some thinly-sliced or shredded cheddar on top (after making sure the chicken's cooked through first) and let it finish cooking. Remove, and serve.
For the record, I'm combining this with cheddar and roasted garlic mashed potatoes, and some corn. Not bad for dinner, eh?
